Recipe of the Week: Cucumber and Red Onion Salad

Cucumber and Red Onion Salad


  • Three cucumbers, peeled, halved lengthwise, seeded and thinly sliced
  • ½ cup sliced red onion (or diced)
  • One teaspoon dried or 1 tablespoon fresh basil
  • One teaspoon dried or 1 tablespoon fresh parsley
  • Two tablespoons red wine vinegar or apple cider vinegar
  • One tablespoon extra-virgin olive oil
  • Two teaspoons Dijon mustard
  • ¼ teaspoon salt


Place cucumbers and onion in a bowl. Combine basil and remaining ingredients in a separate bowl. Pour over cucumber mixture. Toss gently. Cover and chill.
