Gluten Free Irish Soda Bread
In honor of St. Patrick’s day, we took to the “HIT Test Kitchen” and created this version of Irish Soda Bread! Flax and chia seeds bump traditional soda bread to a whole new level.
- Three and ¼ cups brown rice flour
- ¼ cup golden flax seed
- ¼ cup chia seeds
- ¼ cup palm sugar
- One teaspoon aluminum-free baking powder
- One teaspoon baking soda
- ¾ teaspoon sea salt
- ½ cup unsalted butter, cut into bite sized pieces
- One can coconut milk
- ½ cup dried dates
Place dates in a cup of warm water for about 15 minutes to allow to plump. In large bowl combine dry ingredients. With hands, cut in butter until it resembles a course meal. Add coconut milk and plumped dates mixing with hands until moistened. Shape into ball. Knead about 10 times on a floured surface. Shape into round loaf. Put in a greased and pie dish. Cut a cross in top of loaf. Bake at 350 degrees for 1 hour. Cool. Enjoy.
