Recipe of the Week: Baked Banana and Blueberry Oatmeal

Baked Banana and Blueberry Oatmeal

Ingredients:

  • Two bananas
  • 3/4 cup of blueberries
  • 1/4 cup of honey
  • One cup of almond or coconut milk
  • One cup of quick oats
  • 1/4 cup of walnuts
  • 1/2 teaspoon baking powder
  • One teaspoon of vanilla
  • Cinnamon

Spray an 8x8 pan with baking spray. Heat oven to 375 degrees. Slice two bananas and line the bottom of the pan. Add 3/4 cup (fresh or frozen) blueberries. Drizzle one tablespoon of honey and 1/4 teaspoon of cinnamon. Cover with foil. Bake for 15 minutes. 

Meanwhile mix one cup of quick oats, 1/8th cup of walnuts, 1/2 teaspoon of baking powder, 1/2 teaspoon of cinnamon and a pinch of salt. Set aside. 

In a second bowl beat one egg, one cup of almond or coconut milk, one teaspoon of vanilla and 1/4 cup of honey. 

When bananas are done cover with the oat mixture. Then top with the milk mixture. Add another 3/4 cup of blueberries and another 1/8 cup of walnuts. Bake uncovered for 30 minutes. 

Cut into pieces and re-heat to serve.
