Recipe of the Week: Oat Pancakes

Oat Pancakes


  • 1 cup oats (can use gluten free)
  • 1 cup low fat cottage cheese
  • 1 tsp vanilla
  • Dash of cinnamon
  • 1/2 mango
  • 2 omega organic eggs
  • 3/4 cup applesauce for garnish


Blend all ingredients except applesauce in a blender. Heat a pancake griddle; spray with olive oil. Apply mixture to griddle, flip when golden brown. Top with unsweetened applesauce.

For those with a sweeter tooth use apple butter to top.

Recipe yields three servings
