- 1 cup oats (can use gluten free)
- 1 cup low fat cottage cheese
- 1 tsp vanilla
- Dash of cinnamon
- 1/2 mango
- 2 omega organic eggs
- 3/4 cup applesauce for garnish
Blend all ingredients except applesauce in a blender. Heat a pancake griddle; spray with olive oil. Apply mixture to griddle, flip when golden brown. Top with unsweetened applesauce.
For those with a sweeter tooth use apple butter to top.
