Recipe of the Week: Chicken and Tarragon Patties

Chicken and Tarragon Patties

This recipe is dairy free and gluten free.


  • 1 pound ground chicken meat (formed into 4 patties)
  • 1/2 cup chopped red onion
  • 2 tbsp fresh or dried tarragon leaves, chopped
  • 2 tbsp dijon mustard
  • 1/4 tsp sea salt
  • Freshly ground pepper to taste
  •  2 organic omega eggs


Preheat oven to 350 degrees. In a mixing bowl, combine chicken with other ingredients. Mix well. Shape mixture into patties and place on a greased baking dish (cooking spray). Bake about 10 minutes each side, until brown and thoroughly cooked.

This recipe is also great for the grill.

Recipe yields four servings (one serving equals one protein exchange)
